- Preheat the oven to 350°F.
- Spray a 9x5-inch loaf pan liberally with nonstick cooking spray. Set aside.
- Place the butter, cream cheese, sugar, and vanilla in a large mixing bowl. Using a hand mixer fitted with a whisk attachment or stand mixer fitted with a paddle attachment, cream ingredients together on medium speed until pale and fluffy, 3-4 minutes. Add the eggs one at a time, beating for 15-20 seconds between each addition, until mixture is smooth and combined.

Decent, but nothing to write home about. I wish I had pulled it out at 45 minutes, was a tad over-baked. We served it with strawberries.

I’ve made this many times, usually in a 8”x8” square pan or a smaller pan in my toaster oven because this cooks faster than a loaf pan. The cake is not too sweet so I make variations: I mix some of the batter with melted semi sweet chocolate to make a chocolate marble cake. Or sometmes I’ll add some fresh squeezed citrus juice with zest.

Fabulous!!! The only thing I added was some soaked Craisens. I had made a bunch of cranberry nut breads (6) for friends for Thanksgiving but still had about 3/4 cup of Craisens left so I threw them in. Oh and I made a glaze for the top. Wonderful and simple recipe. It is still cooling so I have not tasted it yet but what’s not to love?Thank you so much.

Pretty simple and easy to make. loved the step by step instructions. I divided the mix and added cocoa powder to a third to make it marble. overall it tasted pretty good but it was a bit dry. only baked in the oven for about 45 min.

wonderful. I made mine with a kick of cinnamon to warm up the cold winter days. I added some raisins and some pistachios and reduced the sugar to 150g, to our liking. The smell gathered the family even before serving the cake. it was a real delight. thanks a lot for the recipe. 😃
