I didn’t even try with the envelope shape, I just rolled it up. But they turned out amazing! Great flavor and a huge hit with everyone at the dinner party. I used Pilsberry biscuit dough and it was fantastic!

These were really yummy, but they do not look the same as in the pictures. I cut the puff pastry into 16 squares, not 25 - there's no way you could use the amount of filling called for if you cut it into 25. After filling, I brushed the egg wash all over the tops and put the apps in the fridge for about 20 minutes before baking, and that did seem to help keep them from opening up, but they still puff up a lot in the oven, so the filling got pushed out of the tops. They were still a tasty hit, but if you're concerned about presentation, these won't look as pretty as in the picture.

Everyone loved them! When you make the cranberry pear sauce dice the pear into smaller cubes. The only problem I had was most of the “envelopes” opened well baking, but we still eat them
