it was great but we did some modifications: added garlic, onion, Mexican squash, and used poblano pepper instead of bell pepper. we already deglazed the pan with a little whiskey and a little chicken stock. added cumin, ground mustard, and coriander as spices.

Was really good. Breakfast is my favorite meal to make and to eat. this one is a keeper. would maybe add a bit of heat the next time

This is very similar to a recipe called "Cookhouse Eggs" (?) in a Marlboro cookbook I used to have. I personally prefer to add an onion and use russet or yukon instead of red potatoes. And Ive added (or substituted for bacon) sausage,or ham, or diced steak - or even hamburger once in a pinch. Very good recipe.

I made it this morning, absolutely delicious! Question- why red potatoes? Do they taste different?
They’re a little hard to find in South Africa. I’ll hunt for them if they make this dish any more incredible than it was with regular potatoes

Delicious! We added a little more potatoes than it called and used white American cheese. We’ll definitely make it again

Good meal. I cut the portion since I was feeding only myself, so two eggs, one diced potato, 3 pieces of bacon, and just a little bit of green pepper chunks. I’m happy with it. I’m going to use the remaining ingredients for the next few days breakfast

So yummy!!! Don’t add the peppers at the same time as potato’s though mine were all burnt by the time the hash browns were golden 🥲

It was delicious, definitely not the healthiest breakfast out there but it was very enjoyable!
