Description

There are many versions of this simple salad that’s popular in both homes and restaurants in Colombia. Some people add sliced cooked egg, some add cooked potatoes, some add lettuce, and many people use the same ingredients, but with the vegetables cut differently. No matter the slight variations, the result is a colorful and refreshing salad that makes the perfect side to any main meal. Note that the salad is a great recipe for making ahead of time. It tastes even better when left to marinate in the refrigerator for a few hours or up to a day before serving. The recipe is a Yummly original created by Erica Dinho.

  • 4 medium beets (1 pound total)
  • salt (to taste; optional)
  • 4 medium carrots (peeled and sliced, using a crinkle cutter if you have one)
  • 1 cup corn kernels (cooked from fresh, frozen, or canned)
  • 1/2 cup hearts of palm (canned, sliced)
  • 1/2 small white onion (cut into thin slivers)
  • 3 Tbsp. chopped fresh parsley
  • 2 Tbsp. extra-virgin olive oil
  • 3 Tbsp. distilled white vinegar
  • 1 lime (juiced, plus more to taste)
  • 1/4 tsp. ground cumin
  • 1/4 tsp. black pepper (plus more to taste)

    Directions

    1. Put beets in a medium saucepan, cover with water, and season with salt if you like. Cover and bring to a boil over high heat, then reduce heat and simmer until tender, 15-30 minutes. Drain and let cool.
    2. Meanwhile, put carrots in a second medium saucepan with water to cover. Cover and bring to a boil over high heat, then reduce heat and simmer until tender, about 15 minutes. Drain and let cool.
    3. When beets are cool enough to handle, peel and slice them.

    Easy to make and taste great. definitely, don't combine the beets with the other ingredients until serving. They will bleed into the others and turn everything red. LOL
