  • 2 Tbsp. worcestershire sauce
  • 2 cups ice cubes
  • 4 lb. bison (often labeled buffalo short ribs, cut between ribs to separate)
  • 1/4 cup chopped bacon (about 1 1/2 ounces)
  • 2 cups onions (chopped)
  • 1/2 cup shallots (chopped)
  • 6 garlic cloves (chopped)
  • 1 chile (small jalapeño, seeded, chopped)
  • 1 cup brewed coffee (strong)
  • 1 cup low salt chicken broth
  • 1/4 cup chili sauce (such as Heinz or ketchup)
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. apple cider vinegar

    wow!!! that’s all i can say! we did bison back straps marinaded 24 hrs wrapped in foil and done on grill seriously best piece of meat i’ve ever had!!!
