Description
Coconut milk, fresh lime, and curry powder give this quick stew, made with boneless chicken thighs, a decidedly Caribbean flavor. Feel free to sub in other favorite vegetables for the snap peas and bell pepper strips, and add a side of rice to go with the generous sauce. The recipe is a Yummly original created by Tina Ujlaki.

- Trim all fat from the chicken thighs. Cut chicken into 1-inch pieces and transfer to a large mixing bowl. Toss with the curry powder, and season with the salt and pepper.
- Mince the garlic and ginger. Cut the red pepper into small, short strips. Halve the scallions lengthwise and cut into 1-inch lengths. Finely zest the lime, removing only the dark green outer skin. Reserve the remaining lime.
- Heat the oil in a large saucepan or Dutch oven over medium-high heat. Add the minced garlic and ginger and cook, stirring often, until fragrant, about 1 minute.

Really good. Took way longer than 45 mins but worth it. I used 3 lbs of chicken thighs so I basically doubled all the ingredients. I also added a diced onion when I added the veggies and some red pepper flakes. Because I used 2 cans of coconut milk it was a bit runny so I made a corn starch slurry 2 tablespoon corn starch and 3 water. Simmered for a few mins and it thickened up. Served over rice.

This came out good! Didnt even have to season at the end. Think I would use more coconut milk and seasoning in beginning just to have more sauce. Since served with Jasmine rice. Will definitely make again. Additionally agreed with other reviews, trimming fat from chicken is tedious. Once your past that step everything else is pretty spot on time wise.

Delicious! Made sure it had enough lime juice and it turned out great! You could add some red chili or chili pepper of some kind if you like it hot!

Wonderful! Next time I’d add some more spicy curry; salt and pepper were practically perfect. The chicken took a lot longer to trim, and the snap peas took another 15 minutes to cook til the perfect al’dente!

I left out the curry only because I am the only one in my family that loves it, but other than that I made this recipe as directed. My family could not get enough! My husband said to double the recipe next time I make it (and he's not crazy about chicken)!

A very delicious recipe. I had to go to the grocery in the beginning and make a last minute purchase for coconut milk. I thought I had some in the pantry; found none. The grocery store only had sweetened coconut milk. t I believe the additional sugar made the recipe I made too sweet. When I make it again I will cut back the amount of sweetener, e.g. the brown sugar if I'm using sweetened coconut milk. And I would increase the amount of curry. I know now where I can improve the recipe to my personal taste. I added stir-fry frozen veggies.

Excellent recipe! I followed the recipe and we sprinkled crushed red chili peppers on individual servings according to taste. Will make this again.

It was really good! We did not have the snow peas but it still tasted wonderful. Next time I hope to have the snow peas and maybe add a small ammount of chickpeas to the dish as well. The lime I used was a little small so maybe some more lime zest and juice too.

Made exactly as directed minus the onion (due to preferences). Taste was great, only suggestion is to also add some spice (jalapeños or chilli peppers). Trimming the chicken was also very tedious and time consuming. Would definitely make again

Not the best Thai curry I've had but not bad either. Pretty happy with how it turned out. Would likely make it again.

Absolutely delicious! Made with my boyfriend, came out a rich plate of savory and sweet, with a warming note from the ginger. Serve with basmati or jasmine rice as a great side dish!
