  • 2 pounds chicken breasts (skinless and boneless, cut into bite size pieces)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons curry powder
  • 1 cup chicken broth
  • 14 ounces coconut milk (1 can)
  • 14.5 ounces diced tomatoes (1 can)
  • 2 tablespoons tomato paste
  • 2 tablespoons sugar
  • 2 tablespoons parsley (chopped)

    The recipe as written is disappointing. Tomato flavor is too much. I increased the curry powder, added carrots and bell peppers, turmeric and cut the chicken broth down to 1/2 cup. It still needs something else. Had to add too much salt for flavoring. Would elimate the tomatoe paste next time, drain the tomstoes, and continue to increase curry. Would also add pineapple or fresh mango. Will see...might just look for a different recipe.

    Added some paprika and cumin for more spice. Also added a green bell pepper and carrot to the pot! You only need about 1 cup of chicken broth thats all I used and it was plenty enough

    Easy and delish. Our family likes curry so we added 4 Tbs & 2 Tbs Cumin. Definitely will make again. Everyone loved it :).

    It was simple to make and had a fair bit of flavor depth. Feel free to add a bit more sugar if you like things on the sweeter side, or throw in a bit of ginger to add a bit more. I would recommend this to anyone who likes this type of cuisine but doesn't like things too spicy.

    Seriously one of my favorite recipes to make. It is so flavorful, delicious, and easy to make! It is even better reheated the next day after all the flavors have been able to develop! We make it at least once or twice a month in our house!

    I think it turned out great! I think it was more in the sweet side so I added paprika and cayenne like a lot of the other reviews said. I also added some fresh vegetables like spinach and carrots. I think next time I want to do a veggie version with chickpeas and add some naan!

    Love this recipe it has great flavor. I did modify slightly . I added some zucchini- some cayenne for heat- and used cilantro instead of parsley. Delicious - my sons loved it with basmati rice. My mother always garnished her curry with Spanish peanuts- coconut and chutney. I put a few roasted peanuts on top. Better even left over!

    Very easy! Tasted like an authentic Indian dish. You may want to add a little cayenne and more curry powder to give it a little kick, since it can be a little on the sweet side.

    Very tasty. I added half again the amount of curry powder and used medium-spiced curry to get a bit of extra heat. I also used cornstarch with water to thicken the sauce just before serving.

    Easy and delicious! You can make this even without all the ingredient I was missing curry powder so I used green curry paste I added kale, Potatoes and chickpeas
