  • 3/4 cup unsalted butter (at room temperature)

  • 1 1/3 cups coconut milk (well shaken canned, at room temperature*)
  • 2 large eggs (at room temperature, yolks and whites separated)
  • 1 teaspoon coconut extract
  • 1/2 teaspoon vanilla extract
  • 4 large egg whites (at room temperature)
  • 1/8 teaspoon cream of tartar
  • 12 ounces cream cheese (nearly at room temperature)
  • 3/4 cup unsalted butter (at room temperature)
  • 1 teaspoon coconut extract
  • 5 cups powdered sugar
  • 1 1/2 cups shredded coconut
