Description
Layers of chocolate cake and chocolate buttercream frosting make this a chocolate lover’s dream come true. The recipe is the best of all worlds, with oil and cocoa powder in the cake for moistness and intense chocolate flavor, and butter and melted chocolate in the frosting so it’s rich and fudgy. For the best volume in the cake, set out the eggs and milk to come to room temperature before you begin. Note that the total time includes cooling. - Make cake: Preheat oven to 350°F with a rack set in center. Spray two 8-inch cake pans with nonstick baking spray, or grease them with butter and dust with flour, shaking out excess. Line cake pan bottoms with parchment paper. (To cut parchment the right size, set a pan on top of parchment and trace around it with a pencil, then cut out the round with scissors.)
- Sift flour, granulated sugar, cocoa powder, baking soda, instant espresso powder (if using), and 1/2 tsp. salt through a large-mesh strainer or sifter into a large bowl. Set aside.
- In a medium bowl, whisk together eggs, 1 1/4 cups milk, and the vegetable oil until eggs are blended.
