I enjoyed it. Used a cheese grater instead of a food processor. The reason the directions tell you to make sure the cauliflower is dry is because it takes a lot longer to cook if it is wet.

Delicious! We paired it with chimichurri shrimp. Definitely making its way into our regular rotation!

A read a review that you could use a blender instead of a food processor. That did not work for me. The texture was off and I wasn’t impressed by the flavor either.

It turned out really well!! I used a blender and just kept pulsing the cauliflower until I got it to the consistency I liked!

I used lemon juice and Italian parsley instead of lime and cilantro, it turned out great! Such a clean, refreshing, healthy dish; it went perfectly with baked salmon. I’m cooking low-carb for my father-in-law and he loved this rice... keeps asking me to make it again. 😊

I really liked this dish...the kids however did not! I served it with a soy, lime and ginger beef. The kids didn’t like that either! I’d definitely make it again for myself.

Great loved it! i put garlic and a small amount of onion in the pan to flavor the the oil instead of lime i used lemon tasted wonderful. Ate with a homemade spinach tortilla

my first attempt at cauliflower as a carb substitute. it was easy and can be changed with ease. Husband didn't care for it after I added cilantro and lime. Served with salmon cakes and lemon wedge, they complimented each other very well!
