Description
Spaghetti noodles are the perfect substitute for Chinese egg noodles, which can get gummy when over-handled. This sweet and savory dish can be served warm or at room temperature. Mixing hot, just-drained noodles into the peanut butter sauce allow the pasta to "drink in" the sauce. The recipe, which makes 6 cups, is a Yummly original created by Julia Lee.

Directions
- Bring a large pot of water to a boil. Meanwhile, continue with recipe.
- Thinly slice cucumber on a long diagonal. Stack some of slices at a time and cut into thin strips.
- Put ginger and garlic in a 1-qt. glass measuring cup or another small, deep bowl. Add peanut butter, rice vinegar, soy sauce, honey, and chili garlic sauce and puree with an immersion blender until smooth. If you don't have an immersion blender, whirl ginger and garlic in a food processor to mince, then add remaining dressing ingredients and whirl until smooth, scraping inside of container as needed. Set aside.
- Cook spaghetti in boiling water according to package directions. Drain in a colander and transfer to a large bowl. While pasta is still hot, add dressing and half of cucumber, green onions, and peanuts. Toss until well combined.
- Transfer pasta to a serving bowl and top with remaining cucumber, green onions, and peanuts.

really great flavors! i served with korean pork chops and salad. my old complaint is the noodles get a bit sticky once refrigerated. would be best if the sauce is stored separately on the side and added in when serving

Super yum & easy to make. I added a teaspoon of sesame oil to add a bit more flavor… Buccatini noodles worked well for this dish- a bit more bite than spaghetti noodles

Great recipe, I added some shredded carrots and loved it. Would definitely mar it again.
