Just made this for lunch today. Delicious! I can't wait to try some of the variations.

I had a load of cucumbers and cherry tomatoes coming out of my garden and decided to try this to use some up. WOW was I impressed. This might be my new favorite summer salad. I did use Cilantro instead of parsley (made the salad) and skipped the olive oil. Good stuff.

I took out the red onions (I do not enjoy raw unions) and it turn out good. I think next time I might try adding some lemon zest.

Very refreshing and lovely. I added a bit of quinoa to soak up some of the excess liquid.

This is a fantastic cucumber salad and I will make it again.
If you are on a low-calorie diet, you could use less oil because you really don't need any oil to begin with.

Fresh and delicious-a perfect dish for a hot day. I soaked the red onion in a bit of red wine vinegar which helps with digestion and gives the salad a little zing.

This is a super refreshing and light salad. Would definitely make it in the summer, maybe with bbq or fish dishes.

I added haloumi and avocado, switched the parsley out with cilantro and used an orange vinaigrette dressing. It was very very good.

So great, so delicious. I leave out the oil and vinegar, I like to put only lime juice.

This is soooo delicious except I used cilantro, not parsley. You will want to drink the juice when you bowl is empty!
