    I loved this! Very quick meal to make, even with the chopping. I made this in one casserole dish and divided into 4 super-filling servings. I also love how much protein is in this. I am gluten-free due to Celiac Disease. Just make sure to use GF broth and bread crumbs. One note: I put this into a calorie calculator. My results: 508 calories, 15.6g fat, 35.8g carbs and 54.5 glorious grams of protein. This is fantastic for macro tracking people.

    Very fast dish, but add 20minutes to cooking the quinoa prior to starting the chicken.

    I enjoyed it, cooked it in a casserole dish and I ended with 6 servings. Added some red hot but I add red hot to everything!
