It turned out amazing! Everyone loved it. Even our picky 8-yo. I used 1 rotisseri chicken. We had some left overs as well.

Very good. Upped the spices (& added some paprika) and corn but great flavor and so easy
Super easy and delicious. Instead of pan frying the tortilla, I used the air fryer.

I’ll be the first to admit that I am a lazy cook so when I say this recipe was EASY I mean it!! In fact, this healthy, delicious, filling Chicken Tortilla Soup was easier than I had even anticipated! Never, have had such juicy, flavorful chicken- and all I had to do was plop the chicken breast into a pot! And making the homemade tortilla chips (something I was sure I would mess up somehow) was a breeze! In fact, they were so easy and delicious I had to fry up a couple more tortillas because I “taste tested” a few too many. Oops! I think it’s safe to say this will be one of my new go-to dinners for years to come!

Very very tasty and easy. I had to do some substitutions, I did half a poblano pepper instead of a jalapeño and I only had two cans of diced tomatoes with chilies for the tomatoes. I did just one can of chicken broth and added some bullion. Added avocado, lime, tortilla chips, cheddar cheese and sour cream at the end.
