4 SERVINGS
  • 4 boneless skinless chicken breast (large, cut up into small pieces)
  • 2 cups broccoli (steamed, Do not over cook! They need to have some crunch to them because you will add them to the chicken and cook a bit longer)
  • 2 carrots (optional)
  • 1 handful snap peas (optional)
  • 1/2 onion (optional)
  • 6 tablespoons soy sauce
  • 3 tablespoons orange juice
  • 1 1/2 teaspoons red wine vinegar
  • 3 tablespoons coconut sugar (you can use brown sugar)
  • 3 teaspoons sesame oil
  • 1 teaspoon red pepper flakes (I add more to the grown-ups plates once served. You can omit this completely)
  • 1 1/2 tablespoons cornstarch
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon ginger (optional, I leave this out because Chris doesn’t like ginger)

this was a big hit and I absolutely loved the sauce no for what I learned and would do differently keep in mind that I am a beginner. I found the prep easy but time-consuming as a beginner it took me a lot of time to cut up everything. In the instructions it said to wait for the sauce to thicken but this being the first time I was cooking anything like this I had no idea what to actually look for visually I also simmered on a heat that was too low and at first I covered the pot which was a rookie mistake. eventually it worked when I uncovered the pot of course and I put the heat on a medium-low the sauce was bubbling and finally after about 20 minutes or so it was in a state where if I stuck a spoon i it the sauce would basically drip off just a little instead of being super liquid. on my stove it took pretty long for the sauce to boil down something I would have done differently is to let the sauce boil off a bit before adding in the vegetables and meat or to undercook the vegetables and meat because when you put them in the sauce and they're on the pot simmering waiting for the sauce to reduce they cook more and you don't want them to be over cooked. I also choose to season my chicken separately with a bit of salt and pepper even though the recipe did not call for it. I will definitely be making this again it was a huge success

So good! Very flavorful sauce, added ginger to ours! Yum. Even our kiddos ate it without complaint. Will do again.
