  • 1 cup garbanzo beans (cooked or canned)
  • 1 cup white beans (cooked or canned)
  • 1 cup kidney beans (cooked or canned)
  • 1 cup black eyed peas (cooked or canned)
  • 1 cup canned black beans (or cooked)
  • 1 cup fresh green beans (cut in 1 inch pieces)
  • 1 cup lima beans (frozen and thawed)
  • 2 ears of corn (charred, kernels removed)
  • 1 pickling cucumber (small, chopped, don't peel)
  • 1/2 cup red onion (finely chopped)
  • 1/2 cup red peppers (marinated, I used Bird's Beak peppers from the olive bar)
  • 1 cup cherry tomatoes (halved or quartered)
  • 1/3 cup extra-virgin olive oil
  • 4 Tbsp. red wine vinegar
  • 1 tsp. honey
  • 1 tsp grainy Dijon mustard (grainy)
  • 1 tsp smooth Dijon mustard (smooth)
  • 1 pinch salt (and fresh cracked black pepper)
  • 1 Tbsp. fresh thyme leaves
