    Turned out great!! I chopped up the cauliflower into smaller bits and added Okara which really gave it that chunky texture

    This was simple and delicious. I did substitute some sweet potato for carrots (someone ate the carrots all without telling me). It worked. Added nice color.

    Delicious! I used coconut milk because I don’t do dairy, and used one less cup chicken broth. I also used a few more spices to fit my tastes, but it was so good! Will definitely make again

    Very delicious. Almost like potato soup. It ended up being thinner than a chowder should be, so next time I’ll probably add less liquid. Other than that, super tasty

    My husband and I had this as our relatively meatless Monday lol, turned out very well and he was fooled by the cauliflower, he thought it was potatoes. So we were very satisfied by this healthy chowder. So YUMMY!

    This was really, really good soup. And, for a wonderful Paleo alternative to mashed potatoes, I make this soup with very little liquid and then purée it and serve it with all kinds of meat dishes, a favorite being short rib ragu (a Martha Stewart recipe).

    This recipe was very enjoyable, and my parents loved it! However, when I made it I didn't have any chicken broth so I used water instead, but it still tasted delicious. And making the cauliflower soft look a lot longer than it said but I didn't end up overcooking it. I would recommend this recipe, very delicious!
