  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 3/4 tsp. salt
  • 3 cups carrots (grated, about 9 carrots, you can grate them in food processor fitted with a shredding a blade or use a box grater)
  • 1 cup chopped walnuts (coarsely, or pecans)
  • 1 cup shredded coconut (sweetened or unsweetened*)
  • 1/2 cup raisins (moist, plump, dark or golden or dried cranberries)
  • 2 cups sugar
  • 1 cup canola oil
  • 4 large eggs
  • 8 oz. cream cheese (room temperature)
  • 8 Tbsp. unsalted butter (at room temperature)
  • 3/4 cup confectioners' sugar (sifted)
  • 1 Tbsp. fresh lemon juice (or 1/2 teaspoon pure lemon extract, I omitted this and replaced it with 1/2 teaspoon of pure vanilla extract)
  • 1/2 cup shredded coconut (optional)

    Wonderful recipe. I used 1/2 (only 1 cup) of sugar and added a bunch of crushed pineapple and a ton of mandarin zest. The frosting was still a little sweet for me but still out of this world with lemon instead of vanilla
