  • 1 1/2 lb. carrots (6-7 large carrots, peeled and sliced thin)
  • 2 cups yellow onion (or chopped white)
  • salt
  • 1 tsp. minced ginger
  • 2 cups chicken stock (or vegetable stock)
  • 2 cups water
  • 3 strips zest (from an orange)
  • chives (optional)
  • parsley (optional)
  • dill (optional)

    It was too watery and bland. If I were too make it again, I’d add garlic, pepper and oregano. I’d use less water too.
