  • 2 cups sugar
  • 1 tsp. salt
  • 1 Tbsp. baking soda
  • 1 Tbsp. cinnamon
  • 1 1/2 cups olive oil
  • 4 large eggs (lightly beaten)
  • 1 Tbsp. vanilla extract
  • 1 1/2 cups walnuts (shelled, chopped, more whole or chopped for topping)
  • 1 1/2 cups shredded coconut (sweetened)
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple (drained)
  • 12 oz. cream cheese (at room temperature)
  • 9 Tbsp. unsalted butter (room temp)
  • 3 3/4 cups confectioners sugar
  • 1 1/2 tsp. vanilla extract
  • 3 Tbsp. lemon juice

    Great carrot cake! The actual cake isn’t so sweet so you can sure taste all the other ingredients in the cake. I added 1/4 cup of raisins soaked in honey rum to the batter and it made it even more delicious! Thanks for your recipe 😊

    My go to carrot cake recipe. This cake always comes out moist and delicious. The lemon in the frosting is just the cherry on top of an amazing recipe.

    Well, it’s the third time I made it and first two times were a huge hit. Tonight I made a batch to cool and frost in the morning for a birthday party and while scrolling thru Yummly I remembered that I forgot to add the carrots! Omg! Oh well. No time to do it again. So..... just how important are the carrots? 😱

    Good recipe though I have had better. Made in the form of cupcakes and altered the cooking time to accommodate. I did substitute the walnuts for sliced almonds (because that is what I had), and altered the frosting recipe as well: added cinnamon, nutmeg, meringue powder and extra powdered sugar to hold form better. The carrot cake was good but as I said, I have def had better; it surprisingly seemed almost bland. I will try again in its entire intended form of with walnuts and in form of a layered cake to see if that makes any difference, and if not I will re-start my search for the most perfect carrot cake.

    This cake was so good! The best carrot cake I have ever had! We made this for a family friends birthday and everyone wanted the recipe! Everything about the cake was amazing!

    I think the olive oil threw this off. Definitely plan to make again, using vegetable oil. Otherwise a good recipe

    AMAZING. Simple recipe, easy to prepare and incredible to taste. I tried other carrot cake recipes in the past and was looking for one that did not involve too much oil or raisins, I did change one ingredient though, I did not have the pineapple and skipped that part but made no difference, still the cake was moist, not at all greasy and the coconut made a subtle sweet difference. Thank you for this recipe.

    Wow! This Cake is Amazing! Although I love my dad he can be the hardest to please with food much less impress... My family loves all the ingredients in the recipe I was a little concerned with the olive oil and the fact that my dad is NOT a fan of pineapple especially in cakes. After reading through a million recipes, the ingredients and the reviews, I decided to make this cake for his my birthday gathering. After serving he said this is the recipe to use from now on and everyone in my family agreed.
