  • 1 bell pepper (chopped, I used a red one)
  • 4 cloves garlic (minced)
  • 1/2 cup rice (long-grain)
  • 1/4 tsp. red pepper flakes
  • 1 tsp. salt
  • 28 oz. crushed tomatoes (1 large can)
  • 4 cups water
  • 1 cup coconut milk (unsweetened)
  • 1 lb. medium shrimp (shelled and cut in 1 inch pieces)
  • 1/4 tsp. black pepper (ground)
  • 3 Tbsp. lemon juice (from 1 lemon)
  • 1/2 cup parsley (fresh, chopped, for garnish, optional)

    Followed recipe exactly, however I did not like the flavor. Seemed overpowered by red pepper, then also sweet (not in a good way) from coconut milk. May not be a flavor preference.

    This soup was amazing! Nice hearty consistency with the rice and veggies. Got a fresh French loaf, sliced and put under broiled to crisp up and get a nice crunch. Perfect for dipping!!

    Husband loved it so that is a win for me! followed the recipe and it turned out awesome! Next time I might cut back on the lemon juice, but that is just my preference. Over all a great recipe!

    It was good, not as great as some people reviewed. I had to add lots of pepper and more salt. I also added more coconut milk. I think next time will add chicken or sausage. Still tasty and made a lot

    Won’t add rice the next time. I added tomatoe paste to make it thicker and more fulfilling. I also added green onions because I love onions. Will be making again. It was DELICIOUS

    Loved it! It came out perfect! I added zucchini, shredded carrots, okra, and a little more rice to mines! The cilantro and lemon juice gave it a bomb flavor!

    Quick and easy recipe to follow. I added spicy sausage and more salt than the recipe asked for. I felt like the lemon threw the recipe off a bit. I think it’s better without adding the lemon juice, but that’s just my opinion. Nothing really special about the recipe. It did the job for dinner.
