    I made this for my girlfriend for her birthday, and she loved it! It is a really good recipe. I'm making it again for Easter. The only thing I did differently was to use two 9" rounds so I could make it a two-layer cake. Other than adding a few handfuls of raisins, I didn't change the recipe, and it came out just fine. Looooove this recipe!!

    Everyone at worked raved about it. I enlarged the recipe o 1 ½ times to fit my pan. I used Rice Bran Oil and added walnuts.

    This was a really good cake. Cream cheese icing is always the best part. I didn't alter the recipe at all. Thought the flavors were very good.

    I used half a can of anana and one more carrot, about 500 gr of shredded carrots for a more carroty taste. Also skipped the icing, because I rather have my carrot cake alone. It was amazing and super tasty.

    It was great but I added walnuts. It did take longer too cook than listed but that was ok. lastly next time I will add less sugar for the icing. only b/c I don't like things too sweet.
