I added onions, jalapeno, salt, pepper, garlic powder to the ground beef. I mixed spicy tomato sauce with the enchilada sauce as I find enchilada sauce can be bitter and grainy sometimes. This was good. I ended up freezing half the ground beef mixture without the cheese so I can make another batch soon.

The family loved it. The only thing I did differently was double everything because I thought it wouldn’t make enough but it literally does lol. I also added a little garlic powder to the ground beef which honestly was unnecessary because the enchilada sauce is full of flavor.

Easy to make and tasted great. I made double recipe; cooked half the filling then froze the other half (filling only). All I had to do when I was ready to make the frozen portion was thaw, heat tortillas on stove, open a can a enchilada sauce and add cheese and bake. Will definitely make again especially since you can prepare once and eat twice.
