  • 1 package Shady Brook Farms® Lean Original Turkey Breakfast Sausage (1 lb. per package)
  • nonstick cooking spray
  • 1 cup white onion (or yellow, finely chopped)
  • 2 cups mushrooms (finely chopped)
  • vegetable oil (or olive oil)
  • 1 loaf frozen bread dough (thawed, 1 loaf is about 1 lb.)
  • 1/4 cup shredded mozzarella cheese
  • 1 egg (beaten)
  • 8 fresh sage leaves
  • salt
  • freshly ground pepper

    Directions

    1. Preheat oven to 400°F. Line a baking sheet with aluminum foil and coat lightly with cooking spray.
    2. Coat a large, preferably nonstick, skillet with cooking spray, and cook the onion until softened but not brown, about 3 minutes.
    3. Cut the sausage into pieces, and sauté with mushrooms. Cook until no liquid remains, but mixture is still moist.
