This was delicious! I added leftover red onion that needed to be used. Also used marinated artichokes - the marinated added a nice additional flavor. If using marinated artichokes, I would cook them and the onion first and throw the garlic in for the 30 seconds or so otherwise it sticks to the pan. I also added some of the prosciutto ro the pan for the final minute of cooking. With the Parmesan, marinated artichokes and prosciutto, you could probably skip the salt altogether if you want. Would DEFINITELY make this again!

Loved this, blended the artichokes so they were not chunky, chipped and sautéed the prosciutto before adding to the egg mixture, topped with cherry tomatoes cut in half, key is to bake it all in a cast iron skillet in the oven.

Excellent! The prosciutto is so salty I wouldn't add any extra salt next time. Tossed the arugula in a little olive oil. Would definitely make again! And I made a half recipe--enough for 4 people.
