Substituted Brie for Monetary Jack and it was still delish. Can't wait to try it with Brie when I have it on hand.

This was okay. I didn’t do the balsamic reduction, the apricot spread was sweet enough without it. The brie pretty much disappeared while baking, if I do it again I would add some brie to the top of each breast towards the end of cooking. The dish was best when you could get a perfect bite of chicken, bacon, and apricot all together (if the brie had held together that bite would have been out of this world!). Choose really fat chicken breasts so you can really stuff it with the brie and bacon. Ease of on the apricot, it’s quite sweet. Maybe combine the apricot and balsamic over heat and use as a sauce. That would be tasty.

We have made this several times and love it. Friends and family always ask for the recipe.
Several changes we made were to use vegetable oil instead of olive oil since you want to brown the chicken quickly in high heat. 2nd is to use as much Brie as needed for each piece of chicken. 3rd generously salt and pepper the inside and outside make sure to get it all the way inside. 4th we cook a 1/2 lbs of bacon and use 2/3s for stuffing and the 1/3 for topping. Finally I reduce the balsamic on the stove not in the microwave.
Yes it produces lots of liquid the liquid is great for making quinoa.

I’m not going to make this again. It lacked flavour and was a bit of a disaster. Very fiddly to make.

This recipe was awesome. My picky sister cleaned her plate. The only thing I would do different is add more apricot fruit. I will definatly make and share this recipe.

Delicious! Quite sweet but I like that with chicken and I suppose that would depend on the jam used too. Used tenderloins instead of breast and stacked the cheese and bacon on top. De-lic-ios!

This is absolutely delicious! I'm hooked.
I lightened the calorie load a bit (even though I would've LOVED to eat more of it) with a little less bacon, apricot spread, and brie to fit into my meal prep allowance calorie wise, and it was seriously scrumptious! I used 3 pieces of bacon, 50 grams of brie, and 2 tablespoons of apricot spread on 4 chicken breasts and paired it with quinoa + steamed green beans. I couldn't wait for dinner each day.
I've made it 2 times already and will do it again this week!

I halved the recipe and was concerned about the time to cook it but I had big chicken breasts and cooked it for 30 minutes and it turned out yummy good and the taste is heavenly

OMG y'all, best chicken recipe ever! I knew it would probably taste good, since I often do a yummy brie & apricot spread for an appetizer...but this recipe exceeded my expectations! It was so delicious...the cheese was melted perfectly, the chicken was juicy & tender, and who doesn't love bacon, right?! I had dinner guests over when I made this for the 1st time, and they were very impressed, and the whole family loved it!

Omigosh - made this last night and it was a hit! I did use chicken thighs and inserted the brie mixture under the skin but other than that followed the recipe as written. The blend of flavors was amazing! Definitely a family favorite - thank you

My family loved it!!! And it was very simple to make although I felt like I had a lot of extra incredients left over (ie cheese, vinegar) but maybe that’s because I made it with 5 chicken breasts. I paired it with roasted potatoes and seasoned green beans.

Great combination of flavors! We will make this again.
I had never reduced balsamic vinegar in the microwave before and it took a while before I could tell that it was thickening. When I stopped heating it and stirring it got thicker than syrup really quick.
