  • 1 can chickpeas (rinsed and drained)
  • 1 can diced tomatoes (low sodium or no salt added)
  • 1 whole bell pepper (diced)
  • 1/2 lb. turkey andouille sausage (diced)
  • 1/4 lb. crawfish (feel free to substitute shrimp)
  • 2 cups okra (fresh, chopped)
  • 1 Tbsp. mild curry powder
  • 1/2 Tbsp. ground cumin
  • 1/2 tsp. ground cardamom
  • 1/2 tsp. salt
  • freshly ground black pepper (to taste)
  • 1 tsp. cayenne
  • 2 Tbsp. paprika
  • 2 Tbsp. coconut milk
  • 1 cup pearl couscous (cooked)
  • 1 tsp. dried thyme
  • 1 tsp. dried basil
  • 1 whole bay leaf
  • 2 Tbsp. chopped fresh cilantro
  • 1/2 cup vegetable oil
  • 1/2 cup all purpose flour
  • chicken carcasses
  • 1 onion (large, quartered)
  • 4 carrots (peeled and cut in 1/2)
  • 4 celery (ribs, cut in 1/2)
  • 1 ear of corn (cut into quarters)
  • 5 sprigs fresh thyme
  • 5 sprigs fresh parsley (with stems)

  • 10 peppercorns
  • 2 whole cloves garlic (peeled)
