  • 1 tablespoon coconut oil (any oil will work)
  • 1 teaspoon ground ginger (or fresh ginger to taste)
  • 1 teaspoon chili paste (or sriracha)
  • 1 tablespoon brown sugar
  • 1 lime

  • 2 cups butternut squash (peeled, seeded and cut into 1 inch cubes, I used previously roasted squash)
  • 14 ounces coconut milk
  • 1/2 cup chopped parsley

    Turned out pretty well. I took the blogger’s image of the Brazilian housewife using what was on hand and ran with it. I used fresh ginger, slightly over 1T, which was a bit much; lemon, because the neighbors have a lemon tree, and cilantro instead of parsley. I also didn’t have coconut milk so I used a mixture of 2% milk and coconut juice. I sautéed the onion in bacon grease. Next time I’ll cut the cubes a little smaller. Does a 1” cube mean 1/4” on each side? I added some turmeric for a little richer color and blended a portion of the soup and re-added it. Definitely making this again

    FABULOUS! Have made now a few times and this last time I used canned garbanzo beans, potato and cauliflower. Amazing and very satisfying. The coconut base is an easy go to for most veggies.
