  • 3 cups cauliflower florets (roughly 1 head of cauliflower)
  • 3 cups cooked quinoa (and/or brown rice, see notes)
  • 3/4 cup oat flour (a “dry ingredient” like, almond meal, breadcrumbs, etc.)
  • 4 eggs
  • 1 tablespoon spices (chili powder, paprika, and/or cumin will work)
  • 2 teaspoons salt
  • olive oil (enough, to cover the bottom of a frying pan with a thin coating)

    Incredible! did half the recipe and they came out perfectly! my trick was doing half the cauli and quinoa, 2 eggs, but the full 3/4 cup of bread crumbs. have made them 3 times and they have been perfect every time.

    Have to agree with the last comment, adding 4 eggs made them super runny and no amount of flour made them able to be turned into balls. Will use the basic idea again but won’t follow this recipe.

    It was okay but I could never make the balls. Added a ton more of flour and nothing :(

    This turned out great! My 15 month old and wife both loved it! Enough left for some lunches tomorrow

    Super bland, even with increasing the amount of spices. Could have done with so much more. Even sauce couldn't save them. Will drown the ones I have left in tomato sauce but will never make this again.

    Absolutely delicious! Made the marsala sauce to go with them. Very tasty. A little time consuming but definitely worth it.

    I didn't have a food processor, so I just simply used a potato masher to mash the cauliflower and quinoa together. It worked beautifully plus I didn't have to clean the food processor after. Great recipe!

    These were great! Made some in the frying pan and a few in the oven. The fried ones had a nicer, more even texture but both turned out fine. Will definitely make again!

    It was very hard to get them the right consistency and did not care for the flavor of the sauce that goes along with the recipe. Also, it took me nearly 1 hour and a half to make everything!!

    These turned out really well. They needed a lot more of the dry ingredient than stated and I baked them for an hour at 200C instead of frying. My 11 month old was obsessed with them. He hates getting his hands dirty and his hands were shoving these in his mouth.

    pretty good. i baked them and added a lot more spices / garlic / salt / pepper but i used plain quinoa. Also, after making each ball, I covered them in some more panko bread crumbs which made them crispy crunchy on the outside after baking.

    They was really good. i baked them for an hour instead of frying them. they are crunchy on the outside and soft and moist on the inside. they are perfect.

    The meatballs ended up being flatter because they were to runny to make into balls. However, it all tasted great.

    This is incredible! I would suggest if you are doing the full meal with the masala sauce that you budget yourself sufficient time to prep all the components. The outcome for this meal is sooooo dreamy!!

    Taste was good but these were difficult to keep from falling apart while cooking. It took me over an hour to make this and I consider myself an advanced cook.
